Getting back to the basics. Lundan’s House enjoys the simple things in life. I decided to incorporate ’simplicity’ into my cooking. Check this out...fresh pesto pasta with fresh tomatos and spicy toasted country bread to soak it up. This has very few ingredients and is so versatile, let me lay it out for you. My pasta is fresh, I added store bought pesto (You can find a recipe make a bigger batch and store it. That way you can incorporate it into many other dishes) and fresh tomatos. That’s it! You can add butterflied shrimp to this to beef it up. You can use whatever pasta you have in the pantry, angle hair etc. I used pasta my mom usually gets for me at a local Italian grocery store. Even add some parmesan cheese on top...cheese never hurts anyone. The toast, I accidentally bought two loafs of country white bread. So therefore I needed to use it, here’s what I did. I buttered the toast broiled it and added red pepper flakes. Adds the perfect kick of spice. Super simple, super sophisticated. My husband loves simple dishes not a lot of ingredients or overwhelming spices. Tell me what you think!
